Have you ever wanted to enjoy ice cream for breakfast? Now you can with this healthy version of Banana Berry Soft Serve! (Or have it at any other time of the day!) If you have never used frozen banana to make soft-serve style ice-cream before you simply have to try it to see how amazing it is. This recipe is low in fat, contains only natural non-processed sugar (depending on what yoghurt you use) and is filled with antioxidants from the fresh berries which help protect your body from disease. Chuck out that highly processed, full of sugar, fat and artificial additive ice-cream that may taste good but will leave you feeling yuck and reach for this healthy dessert for a guilt free healthy summer instead.
Banana Berry Soft Serve
Ingredients
*3 medjool dates, pitted
*1.5 cups frozen banana (slice before freezing to make it easier to process)
*½ cup fresh berries (I used mulberries)
*½ tsp vanilla
*¼ cup yoghurt (opt for low fat/low sugar yoghurt. I used coyo coconut yoghurt)
*Toppings such as goji berries, coconut, cocao nibs, white mulberries, flaked almonds or other nuts, chia seeds
Method
1. Process all ingredients in a food processor fitted with an S blade until smooth and creamy (Make sure you don’t over process or it will turn into a smoothie/slushy instead of icecream).
2. Spoon into 2 bowls and top with delicious extras.
3. Enjoy immediately.
Tips
*Prepare the toppings before hand so that you can quickly add them before the ‘icecream’ starts to melt.
*Depending on which berries you use and which yoghurt you use you may need to add more frozen banana to thicken the mixture so it’s not just a slushy. If it’s too thick you could add more yoghurt or a touch of milk.
