Super Easy Burrito Bowl
“Bowl” food is a popular healthy, balanced meal, typically containing whole grains, fresh salad greens, a protein source and other toppings. Sometimes these bowls can get quite complicated with multiple cooking methods and bits and pieces that can end up taking a lot of time to prepare.
In contrast, this bowl has just a handful of simple ingredients, and apart from the quinoa/brown rice (which you can prepare the day before for fast on-the-day prep) there is no cooking time. You can have a healthy, hearty balanced meal ready in just 15-20 minutes (if grains have been precooked).
This bowl is designed to be eaten with the same ingredients you would eat a burrito or taco, but without the wrap or taco shell. Feel free to swap/add your favourite ingredients to suit your taste buds.
*This is an awesome lunch idea! Prepare (cook) your grains on a Sunday and this bowl will take under 10 minutes to prepare in the morning for a yummy work lunch!
Easy Burrito Bowls
Serves: 2
Time to make: 15-30 minutes (including cooking rice/quinoa)
For the bowl
1 cup cooked quinoa or brown rice
2 handfuls spinach or other fresh greens
1 tin black beans
Spanish Olives
Salsa
Any other toppings you like eg. fresh tomato, capsicum, corn, grated carrot, herbs etc.
For the guacamole
1 avocado
¼ red onion or 1 green onion
½ lime juiced
4-5 cherry tomatoes or 1 chopped tomato
Salt and pepper
Directions
1. Place the cooked quinoa in two bowls
2. Drain the beans and add half to each bowl
3. Divide the other toppings between both bowls
4. Add a large spoonful of salsa to each bowl
5. Make the guacamole by mashing the avocado then mixing in the other ingredients
6. Top the bowl with the guacamole
7. Enjoy!
