Another festive salad that is super easy to prepare and also delicious for Summer barbeques.
Craisin Cous Cous Salad Recipe.
Preparation Time: 15 minutes.
Cooking Time: 6 minutes.
Serves: 8 people.

*290g cous cous

Method
1. Place the cous cous and craisins in a heatproof bowl and pour over the water. Cover and set aside for 5 minutes or until all the liquid is absorbed. Use a fork to separate the grains.
2. Meanwhile, cook the pine nuts in a small frying pan over medium heat, stirring, for 5 minutes or until toasted.
3. Add the pine nuts, shallot, parsley and lemon juice (and optional ingredients if you have used them) to the couscous mixture and stir to combine.
4. Place in a festive bowl and bob’s ya uncle!
