Ingredients
*1 banana per person
*Fresh lemon juice
*Cinnamon (sprinkle to taste)
*Nutmeg (sprinkle to taste)
*Nuts such as almonds, pecans, walnuts, cashews or a combination (a small handful)
Optional extras:
Desiccated coconut, sliced dates, chia seeds, ground flaxseed, raisins, dried apricots, goji berries etc.
Method
1. Slice the bananas in half length ways and place on a tray or a heatproof plate.
2. Squeeze fresh lemon juice over the bananas then sprinkle with the spices.
3. Place under a hot grill until bananas start to brown.
4. Remove from under the grill and scatter the nuts and any other additions on top. Perhaps sprinkle a little more of the spice.
Enjoy!
Note: If you prefer the taste of toasted nuts or coconut you can add them in the last few seconds of grilling but watch very carefully as they will brown and burn a lot quicker than the banana.
