These superfood pancakes are an ideal breakfast or snack option as they are packed full of healthy, nutritious ingredients to keep you feeling full and energised through the day.
Superfood Pancakes
(makes 8-10 pancakes)
Preparation time: 20 minutes
Ingredients
*3 free range eggs
*1/2 cup milk (I used almond milk)
*1 tablespoon chia seeds
*1 cup rolled oats
*1 teaspoon baking powder
*1/2 teaspoon ground cinnamon
*150g cottage cheese
Method
1. Combine eggs, milk, chia, oats, baking powder and cinnamon in a bowl. Rest for 15 minutes to soften the chia and oats. Give it a mix half way through resting period.
2. Add cottage cheese and stir into pancake mixture.
3. Heat a non stick pan over a low/medium heat with a little macadamia nut oil, olive or coconut oil and spoon in the pancake mix, 2 tablespoons per pancake.
4. Turn down the heat and cook over a low heat so the pancake cooks through.
5. Flip over and cook the other side.
5. Serve with berries, thick yoghurt, banana and a drizzle of raw honey.
